Pommes Aligot

Ingredients

  • 3 kg Asterix potatoes
  • 3 cartons of heavy cream (600 g)
  • 150 g unsalted butter
  • 500 g brie cheese (rind removed)
  • salt to taste
  • freshly grated nutmeg to taste

Directions

  1. Boil the potatoes until very tender.
  2. Mash while still hot and return to the pot.
  3. Mix in butter and heavy cream until you get a creamy mash.
  4. Season with salt and nutmeg.
  5. Add the brie in pieces and stir until the mash becomes very stretchy.
