Garlic Lemon Rice

Ingredients

  • 2½ cups rice
  • 5 cups hot water
  • 5 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • salt to taste
  • zest of 1 lemon
  • ½ cup chopped parsley

Directions

  1. Sauté the garlic in olive oil and butter.
  2. Add the rice and sauté for 1 minute.
  3. Add water and salt.
  4. Cook for 12–15 minutes.
  5. Finish with lemon zest and parsley.
